An Australian Summer isn’t quite complete without an afternoon BBQ with your closest friends. Synonymous to the occasion the Aperol Spritz was first enjoyed in Italy, socialising together, regaling memories and sharing stories with laughter amongst a smoking BBQ is engrained in the true Australian culture.
It’s widely accepted that hosting a BBQ is an essential on Summer’s Bucket List. But the real question is…what’s on the menu? Out of appreciation for the shared social occasion, we’re introducing some Italian flair to the traditional Aussie BBQ.

In partnership with Broadsheet, we caught up with Flavio Carnevale, food-lover, BBQ extraordinaire and owner of Sydney’s Restaurant Marta. For an Italian inspired BBQ, Carnevale recommends a recipe he recalls from time spent with family on the Amalfi Coast, the spiedino – skewer of meat and vegetable intertwined with molten mozzarella, cooked over flaming charcoals.
Skewers are a great inclusion for any BBQ as it’s so easy to cater to the likes of many tastebuds, layering any combination of meat and vegetables or using different marinades and spice rubs. For those who prefer frutto del mare or fruit of sea, consider serving up our BBQ King Prawns with avocado salsa.
Whilst your spiedino are charring on the coals, you can quickly prepare a simple yet elegant Caprese salad, layering slices of heirloom tomato, mozzarella & fresh basil leaves. Dressed with balsamic vinegar and e.v.o.o.
